Rondo Residencies: Fired-Up Sunday Roasts with ACME Fire Cult
Sunday roasts are getting the ACME Fire Cult treatment this October, as chef Andrew Clarke and the ACME team take over Rondo for the latest edition of Rondo Residencies.
Across four Sundays, they’ll be putting their signature live-fire spin on a proper Sunday roast. The main event is a sharing platter piled with roast beef rump and bone marrow salsa roja, crispy pork belly with gooseberry-poblano ketchup, achiote chicken leg and lamb kofte, served alongside grilled Kalibos cabbage and agave Jersey Royals. Go bigger with slow-roast ox cheek or roast bone marrow on the side, or try the adobo king oyster mushrooms with charred corn and tomatillo salsa.
To start, expect coal-roast leeks with pipián verde, jalapeño and ricotta, roast Delica pumpkin with Ilegal Mezcal-agave glaze and black fig, raw tuna tostada with chipotle, avocado and salsa macha, and grilled scallop with smoked bacon, chilli butter and guindilla pepper. For pud, there’s chocolate and black mole ganache with cherries and crème fraîche, or burnt Eton mess with guava, strawberry compote and fresh berries.
Ilegal Mezcal is joining the party on drinks, with Bloody Marias, Mezcal Margs and Palomas on the menu. Add a cocktail on arrival for ÂŁ10, or start strong with a Gildaback: a shot of Ilegal Joven with a gilda on the side.
ACME isn’t just here for Sundays. Throughout October, ACME Tacos will be taking over Rondo’s monthly sarnie special in the lobby with a smoked lamb shoulder taco with mezcal asador pineapple. Available from 12pm daily.
