PianoStrada steps into our kitchen for one night only, from aperitivo through dinner.

Tuesday, may 19 PianoStrada meets Elio
for one evening only, from Trastevere to Parioli, PianoStrada leaves home and takes over The Hoxton, Rome’s kitchen for a new chapter of our single guest chef series.

Rooted in Trastevere and led by Paola Colucci alongside her daughters and longtime collaborator Claudio Francazi, PianoStrada has become one of Rome’s most loved tables for its instinctive, heartfelt approach to cooking.

Family-run and mostly female-led, the restaurant blends Mediterranean tradition with seasonal ingredients, thoughtful technique and a style that feels both refined and effortlessly welcoming.

Starters

fig compote, Parma prosciutto, and basil

Stracciatella cheese from Andria, achovies from Cetara, confit cherry tomatoes, candied lemon, arugula, and spearmint

Deconstructed tempura zucchini flower
Buffalo mozzarella, “Delfino” anchovies from Cetara, lemon zest and parsley

 

First Courses

“Benedetto Cavalieri” spaghetti
baked datterini tomato sauce, fresh datterini tomatoes, home-smoked ricotta cheese, lemon zest , and basil

Cacio e pepe tortelli with vignarola crudités
Peas, artichokes, lettuce, spring onion, crispy guanciale, and Falisco pecorino

 

Second Courses

Vitello tonnato and Bluefin tuna
Thinly sliced roast veal, raw bluefin tuna, tuna sauce, crispy capers, and aromatic herbs

Iberian pluma, passito wine and peaches
Grilled Iberian pork pluma, peach chutney, melted spring onion, and Pantelleria passito wine reduction

Dessert

Gelato Pianostrada 
Fior di latte gelato with vanilla and tonka bean, salted caramel, toasted pecans, and crispy wafers
