Pineapple Express – Discarded Grape Vodka, Chambord, Lemon, Roasted Pineapple Soda, Tarragon
Utilising tarragon stems from the kitchen, we infuse the vodka to add a deeper dimension to this refreshing serve
Extra Americano – Discarded Cascara Vermouth, Apricot Brandy, Coffee, Soda
We infuse the Brandy with waste coffee grounds and top with a shot of cold brew to make this all-day aperitif
Ouroboros – Discarded Banana Peel Rum, honey, Chocolate Bitters, Honeycomb
An old-fashioned cocktail made rum flavoured with banana peels and our waste hot chocolate bitters
Extra Gimlet – Discarded Grape Skin Vodka, Llama Lime Cordial
Each day our rooftop restaurant, Llama Inn juices limes to make their house ceviche, we then use the leftover lime skins to make this tangy cordial
